Country Captain Chicken

Ingredients:

groundnut oil – 1/2 cup
chicken jointed – 1
ground onion – 1 cup
vinegar – 2 tbsp
salt – to taste
slit green chillies – 2

Grind to a paste in vinegar:
kashmiri chillies or 2 ordinary ones – 6
heaped tsp of cuminseeds – 1
cloves of garlic – 5
piece of ginger – 2 cm
whole peppercorns – 6
turmeric – 1/2 tsp

Method:
Heat the oil in a karahi. If you use a non-stick one, you save a lot of oil. Fry the chicken pieces till brown. Remove and keep aside.
In the same oil, add the onion paste and fry till golden. Add the ground paste and fry for a couple of minutes. Add the chicken and vinegar and fry till a golden brown. Put in a little water and salt, and cook till the chicken is tender.
Serve garnished with the green chillies and capsicum juliennes, if desired.
