Ingredients:
Tender chicken (washed after cleaning) – 1
Boiling water – 8 cups
Spring onions with leaves (chopped) – 1/4 stalk
Ginger (grated) – 1″
Cooking wine (vinegar) – 1 tbsp
Ajinomoto – pinchful
Salt – to taste
Method:
Cover the chicken with boiling water and boil for 2-3 minutes. Drain and wash off excess from chicken.
Place the whole chicken in a deep pan. Add cut ginger and onions. Add boiling water (8 cups) and simmer for 11/2 hours, remembering to remove the excess from soup regularly.
Add seasoning. Serve the soup with the whole chicken.
