Khus Khus &#8211; 1 Tablespoon<br />
Grated Coconut &#8211; 5 Tablespoon<br />
Cashewnuts &#8211; 8<br />
Cinnamon &#8211; 1 Inch Piece<br />
Cloves &#8211; 3<br />
Garlic &#8211; 1 Full pod peeled<br />
Onions &#8211; 2 Cut into bits<br />
Tomatoes &#8211; 2 Chopped<br />
Salt &#8211; To taste</p>
<p>Method<br />
Grind or mix chilly powder and dhania powder together with a little water.<br />
Grind somph, jheera, khus khus and ginger together.<br />
Grind coconut and cashewnuts together.<br />
Heat oil in a vessel, fry cinnamon, curry leaves, cloves, cut garlic and cut onions, fry well.<br />
Then add dhania and chilly masala, then samph, jheera masala fry well.<br />
Add the cleaned meat pieces and fry for 15 to 20 minutes<br />
Then add the coconut mixture and the cut tomatoes.<br />
Pour adequate amount of water.<br />
Add salt to taste and pressure cook.<br />
When meat is well cooked remove and serve, garnish with chopped coriander leaves.</p>

<p>Grind together<br />
Chilli Powder &#8211; 2 Tablespoon full<br />
Somph &#8211; 1 Teaspoon<br />
Khus Khus &#8211; 1 Tablespoon<br />
Cinnamon &#8211; 1/2 Inch<br />
Cloves &#8211; piece 2<br />
Grated Coconut &#8211; 4 Tablespoon </p>
<p>Method<br />
Heat a vessel with 2 glasses of water, add minced meat and ground masala and boil well or pressure cook till meat is cooked.<br />
Heat a deep frying pan with oil, add cut onions and garlic and fry till onions are golden brown.<br />
Then add the cooked meat with the remaining water. Cook till all the water is absorbed, add salt to taste.</p>

Chilli powder &#8211; 3 teaspoon<br />

<p>Crush to a paste using a little water:<br />
Ginger &#8211; 1/2 Inch<br />
Somph &#8211; 1/2 Teaspoon<br />
Garlic &#8211; 6 Small Pods</p>
<p>Method:<br />
Wash the brain well and cut into fairly large pieces.<br />
Heat a vessel with 1 glass of water, add chilli powder, turmeric powder, salt and half the cut onions and the brain and cook for 10 minutes, remove from fire.<br />
Heat a frying pan with a little oil, put the remaining cut onions, fry well, add the crushed spices.<br />
When onions have browned, add the cooked brain with the water, mix carefully, so as not to break the brain pieces. Cook till all the water is evaporated, and the brain is well cooked, garnish with cut coriander leaves.</p>

Method</p>
<p>Wash the brain well. Heat a vessel with 2 glasses of water, add the brain and turmeric powder and boil. While boiling, turn the brain on to the other side, cook for 5 minutes, till the brain is well cooked. Remove from fire, drain the water and keep the cooked brain side.<br />
Heat a deep frying pan with oil, first put cinnamon, somph, then cut onions, garlic and green chillies, and fry well.<br />
When the onions are well cooked and browned, add the brain cut into four parts, mix well.<br />
Beat the egg well, add salt to taste. Pour over the brain and mix well till the egg is coated over the brain and gets cooked well, then remove from fire.</p>

<p>Method<br />
Cut kidney and liver into small pieces.<br />
Cut onion and fry.<br />
Grind together coriander seeds, jeera and pepper to a fine paste.<br />
Boil 2 litre of water. When water boils, add curry leaves, turmeric powder and ground paste. Mix well, then add kidney, liver and salt. When it boils, after 10 minutes remove from fire .</p>

<p>Method<br />
Clean the bones.<br />
Dry roast the green gram dhal.<br />
In 2 litre of water add the dhal, bone, cut onion and cut tomatoes and split green chilli and turmeric powder, pressure cook for 15 minutes till well cooked.<br />
Mash, strain and keep the soup aside.<br />
Heat a vessel, add the ghee, then curry leaves, cinnamon, cardamom. Then add the strained soup, add salt to taste, boil, add a few coriander leave. If thick, add a little more hot boiling water. Serve the soup in this consistency.</p>

<p>Method<br />
In a cooker, add 2 litres of water. When water boils, add cleaned, cut rib bone, cut onion, thuvar dhal, curry leaves, turmeric powder, chilli powder and pepper powder. Cook well for 15 min. till well cooked. Heat a vessel, add oil or ghee. When hot add cinnamon, cardamom, cloves and salt. Then add the soup and salt, boil well, add coriander leaves. Serve the soup hot.</p>

Dried Meat pieces &#8211; 6<br />
Small Onions &#8211; 20 (Peeled and cut into half)<br />
Garlic &#8211; 1 Full pod peeled and cut<br />
Tomatoes &#8211; 2 Cut<br />
Tuvar  dhal &#8211; 1 cup cooked<br />
Somph &#8211; 1/2 A Teaspoon<br />
Cinnamon &#8211; 1/2 Inch piece<br />
Chilli Powder &#8211; 2 Teaspoon<br />
Dhaniya Powder &#8211; 2 Tablespoon<br />
Turmeric Powder &#8211; 1/2 Teaspoon<br />
Tamarind &#8211; 1 Small lime size<br />
Drumsticks &#8211; 3<br />
Brinjal &#8211; 4</p>
<p>Method<br />
Pour a little oil in a vessel. Add somph, then cut small onions and cut garlic, fry well.<br />
Wash the dried meat pieces, pound a little into pieces and add to the fried onions and garlic.<br />
Pour 2 glasses of hot water and let the meat cook.<br />
When 3/4 cooked add cooked tuvar dhal,add cut drumsticks ,add cut brinjals cook and cover.<br />
Mix tamarind, chilly powder, dhaniya powder and turmeric in half a glass of water, pour into the meat curry cook till the gravy is fairly thick remove from fire.<br />
Heat a vessel with a little oil. First put cinnamon and the tomatoes, cook for a while and pour the curry into this, boil for a few minutes and remove from fire.</p>
