Method:<br />
Chop the chicken into pieces.?<br />
Fry chopped onions, ginger and garlic in the vegetable oil.?<br />
Add remaining spices and fry for a few minutes.?<br />
Add tomato pieces and salt. Fry for another 5 minutes.?<br />
Add chicken pieces and mix well to coat them with the gravy.?<br />
Put the lid and simmer the contents for about half an hour.?<br />
The mixture would turn almost dry. Occasionally add a little water if required.?<br />
Chettinad chicken roast is ready to serve.</p>

<p>Method:</p>
<p>?Cut cluster beans into 1/4 inch pieces and cook. till soft. Drain excess water.<br />
?Soak thuar dhal in water for 1 hour.<br />
?Grind it along with chillies, cuminseeds, coconut and salt to coarse paste.<br />
?Heat oil in a deep curved pan, add mustard, curry leaves and fry cooked beans for 1 or 2 minutes.<br />
?Add ground paste with more oil and cook in reduced flame till dry, stirring in between.</p>

<p>Crabs &#8211; 4 medium<br />
Onions &#8211; 2 Cut into small pieces<br />

Fenugreek &#8211; 1/2 A Teaspoon<br />
Tamarind pulp &#8211; 3 Tablespoon<br />
Curry leaves &#8211; A few<br />
Salt &#8211; To taste<br />
Oil &#8211; 4 Tablespoon</p>
<p>Grind to a paste the following:</p>
<p>Grated Coconut &#8211; 2 Tablespoon<br />
Jheera &#8211; 1 Teaspoon<br />
Pepper &#8211; 2 Teaspoon<br />
Somph &#8211; 1 Teaspoon<br />
Chilli Powder &#8211; 2 Teaspoon<br />
Turmeric Powder &#8211; 1/2 Teaspoon<br />
Garlic flakes peeled &#8211; 8 to 10</p>
<p>Method</p>
<p>Heat oil in a deep frying pan, when hot, add mustard and fenugreek. Then add cut onions. Fry for a few minutes, add cut tomatoes and cook till tomatoes are soft.<br />
Add cleaned and cut crabs, fry for a few minutes.<br />
Add the ground masala and mix well and fry for five minutes.<br />
Add 11/2 glasses of water, mix well, cover the pan, keep stirring from time to time till most of the water is absorbed.<br />
Now add the tamarind juice and salt to taste. Mix well, fry well for five minutes. Add cut curry leaves, mix well and remove from fire.</p>

Big onions &#8211; 2<br />
Green Chillies &#8211; 6<br />
Tomatoes &#8211; 6<br />

Garlic &#8211; 1 Full, pod<br />
Turmeric Powder &#8211; 1 Teaspoon<br />
Salt &#8211; To taste<br />
Oil &#8211; 4 Teaspoon<br />
Breadcrumbs</p>
<p>Method</p>
<p>Clean crab in water and boil with salt and turmeric powder.<br />
Remove the flesh from the crab keep the shell intact, cut the legs and remove the flesh.<br />
Keep the flesh of the crab in a dish.<br />
Heat a kadai with oil, add cut onions, cut green chillies, cut ginger, cut garlic, add turmeric powder and fry well, then add cut tomatoes. When cooked, add crab flesh, cook well. Add 1 egg beaten cook well.<br />
Remove from fire. Add cut coriander leaves, then fill the shells with the cooked crab.<br />
Fry the breadcrumbs a little and sprinkle on the shell and serve hot.</p>

When tomatoes are cooked, add masala powder and cook well till the oil comes up.<br />
Then add 1/2 glass hot water, when the gravy boils, add cleaned prawns cook well till prawns are well cooked, add coriander leaves and juice of lime and then remove from fire.</p>

<p>Ingredients<br />
Minced meat &#8211; 1/2 Kilo<br />
Onions &#8211; 2 Big cut fine<br />
Garlic &#8211; 1 Full pod peeled and cut fine<br />
Salt &#8211; To Taste<br />
Oil &#8211; 4 Tablespoon</p>
<p>Grind together<br />
Chilli Powder &#8211; 2 Tablespoon full<br />
Somph &#8211; 1 Teaspoon<br />
Khus Khus &#8211; 1 Tablespoon<br />
Cinnamon &#8211; 1/2 Inch<br />
Cloves &#8211; piece 2<br />
Grated Coconut &#8211; 4 Tablespoon </p>
<p>Method<br />
Heat a vessel with 2 glasses of water, add minced meat and ground masala and boil well or pressure cook till meat is cooked.<br />
Heat a deep frying pan with oil, add cut onions and garlic and fry till onions are golden brown.<br />
Then add the cooked meat with the remaining water. Cook till all the water is absorbed, add salt to taste.</p>

Onions &#8211; 3 (Cut into piece)<br />
Chilli powder &#8211; 3 teaspoon<br />
Turmeric powder -1/2teaspoon<br />
Salt -To taste<br />
Oil &#8211; 2 Tablespoon</p>
<p>Crush to a paste using a little water:<br />
Ginger &#8211; 1/2 Inch<br />
Somph &#8211; 1/2 Teaspoon<br />
Garlic &#8211; 6 Small Pods</p>
<p>Method:<br />
Wash the brain well and cut into fairly large pieces.<br />
Heat a vessel with 1 glass of water, add chilli powder, turmeric powder, salt and half the cut onions and the brain and cook for 10 minutes, remove from fire.<br />
Heat a frying pan with a little oil, put the remaining cut onions, fry well, add the crushed spices.<br />
When onions have browned, add the cooked brain with the water, mix carefully, so as not to break the brain pieces. Cook till all the water is evaporated, and the brain is well cooked, garnish with cut coriander leaves.</p>
