MATAR PULAO (Pea Rice)

Ingredients
Approximately - 230 grams
Rice - 1 cup
Hot water - 2 cups
medium sized onion, sliced finely- 1
Bay leaves - 2
Cumin seeds - 1/2 teaspoon
Butter and oil (mixed)- 1 1/2 tablespoon
Shelled peas or shelled fresh
green gram - 4 tablespoons
during the season
Salt - 1 1/2 teaspoons
Method:
Clean rice, soak in cold water for 2 to 3 minutes.
Drain and discard water.
Heat oil. Fry onions until pale gold, add cumin seeds, fry further till the seeds pop.
Add rice, bay leaves, salt and peas and saute for a minute.
Add water and cook covered for 10 to 15 minutes or till rice is three – quarters done.
Place a griddle or a tawa under the pan to prevent rice from sticking. Cook for another 5 to 7 minutes or till rice is tender and the grains are separate. Serve hot.
