MIXED VEGETABLE PULAO (Rice)

Rice – 1 cup
Black peppercorns (whole) – 10
Cumin – 1 teaspoon
Tomato (large size cut into small pieces) – 1
Green chillies (finely chopped) – 2
Salt – to taste
Cloves – 6
Cardamoms – 4
Onion (cut finely) – 1
Carrot (cut into small pieces) – 1
Shelled Peas – 1/2 cup
Oil – 3 tablespoons
Water – 2 cups
Method:
Wash the rice and soak for 15/20 minutes. Put 3 tbsps of oil in a pan adding cardamoms, cumin whole black peppercorns, cloves and fry them till they turns brown.
Add onions, tomatoes, carrot, peas, green chillies and fry them for a few minutes. Drain out the water from the rice and put it in the pan and fry it for at least 1 minute. Then add 2 cups of water and salt and cover with a lid.
Cook till rice is done. Switch off the heat and leave the lid in place for 5 minutes. Serve the pulao hot with plain yogurt or nay ‘raita’ or tomato chutney.
